So I love potatoes, they are most certainly my favourite food in any of there many varieties but recently I have been a big fan of sweet potatoes and with summer coming up and plenty of BBQ I was looking for a recipe to go well with BBQ food.
So here is my quick and easy sweet potato fries with a choice of vegan mayo flavours What will you need:
- A sweet potato
- Black pepper
- Paprika
- Olive oil
- Vegan mayonnaise
- A choice of condiments (my favourite are in this recipe)
Here is what you do
Take your sweet potato and peel it (you can do skin on fries but I prefer the peeled recipe when I am having with mayonnaise) and then chop into fries. I don’t pay too much attention to the size as long as they are roughly the same size as each other so they cook evenly.
Then I add on to them olive oil, I am not overly specific with the quantity but about 5 tablespoons just enough to over the potato above, then black pepper and paprika to taste. Give them a good shake so they are all covered and then place in the oven for about 20 to 25 minutes at 220.
While these are cooking you can make your mayonnaise flavours. Personally I go for egg free mayonnaise as it is the same texture as ‘normal’ mayonnaise. I do one paprika mayonnaise just add about a tablespoon of paprika and mix, then I do one mustard mayonnaise with a big tea spoon size dollop of mustard and mx and finally a garlic and lemon mayonnaise. I like lemon so I use the whole lemon and then one clove of garlic chopped small as you can and mix.
This gives you 3 yummy flavours to eat with your fries so take them out the oven and start dipping. No cutlery required!
