One of my favourite foods as I think I have mentioned before is potatoes and one of my favourite ways to eat them is patatas bravas. This is a Mediterranean tapas dish that is fried potatoes with a tomatoes sauce on top and aioli. I have this every time I go for tapas. So when I tried to make this at home I was aiming for something similer but I thought I would do it with a little twist so I made turmeric flavour potatoes with tomato sauce and vegan garlic mayo.
So here is what you need:
For the turmeric fried potatoes you need potatoes (as many as you like), olive oil, pepper, white wine vinegar, garlic and of course turmeric.
For the tomatoes sauce you need chopped tomatoes, pepper, white wine vinegar and paprika.
To make this you need to chop the potatoes thin and small, don’t worry too much but you basically need to ensure that they are as much as you can the same size so that they cook all together. Put them in a pan with about 3 table spoons of olive oil. Add in the garlic, turmeric, white wine vinegar and pepper and leave to cook turning occasionally to make sure that all the potatoes recooking as evenly as you can. For me for the size of the potatoes in the bowl took about 20 minutes.
While this is cooking you can do your tomato sauce. I used half a tin of chopped tomatoes (the cheapest you can find), add them to a pan and add in your pepper and paprika to taste. If you want this to be spicy you can add in chilli as well.
Mix this all together and let them simmer for the same time it takes to cook the potatoes.
Once the potatoes are cooked you can add them into a bowl ready to serve. You will know that the potatoes are cooked because they are brown and crispy at the edges and soft in the middle.
For patatas bravas they put the tomato sauce on top and leave the aioli as a dipping sauce but I left both the tomato and the garlic mayo as a dipping sauce.
Then most importantly enjoy.
