Breakfast is my favorite meal of the day no question, maybe even more so since going vegan. Traditionally breakfast contains a lot of diary and eggs so I thought I would share with you what I eat for my vegan breakfasts.
Firstly I have scrambled tofu with bacon bits and avocado on vegan brown bread. The bacon bits are from the brand Vivera and they are amazing, they are very salty so I couldn’t eat them by themselves you need the avocado to balance this out but otherwise they are really good. For my scrambled tofu I add salt, pepper, paprika and lots of butter (this is not a healthy breakfast!), the butter and paprika add a yellowy colour as well so it looks more like scrambled egg.
Next is a classic, peanut better on toast. I like smunchy peanut better as it is not quite crunchy and not quite smooth. This is from the brand Proper Nutty.

Next is avocado on toast, I sometimes cut my avocado and sometimes I smash it. The below is smashed with lemon and topped with pumpkins seeds, sunflower seeds and chia seeds. Pumpkin seeds are good for providing B vitamins, magnesium, iron and protein, sunflower seeds are good for providing vitamin E, magnesium, protein and fatty acids. Finally chia seeds are good to provide omega-3 fatty acids, antioxidants, fibre, iron, and calcium.
Next is a much lighter breakfast of Alpro soya yogurt with pumpkins seeds, sunflower seeds and chia seeds as my toppings. This is the vanilla flavor but I also really like the natural greek yogurt as then I add maple syrup. I sometimes add fruit to the top or nuts (you can even add chocolate if you want).
Finally this is my take on the full English breakfast with tomato, avocado and sausages with toast. These are the Sainsbury’s vegan sausages and the bread is by a brand called Roberts. It is really tasty bread and matched with the Flora vegan butter it is amazing.
So that is my vegan breakfast selection, there are of course so many but these are my go to ones that I look forward to at the weekend.
