For me one of the most important things to ensure I keep on track with being a vegan is not depriving myself of a few treats. While being a vegan is a lifestyle choice not a diet or fad I do love my food so if I was to deprive myself I feel I would find it much harder to stay on track. I am a self confessed pudding fan and there is no doubt that I have a sweat tooth and while there are lots of vegan snacks out there I have found that not all of them quite hit the spot when it comes to indulgence. So here is my recipe for an (not too unhealthy) indulgent sweat treat.
You will need …..
Porridge oats (any you can find – cheap supermarket value ones do just as good)
Maple syrup – again any unbranded one is fine
Vegan butter – vitality, soya brands, flora dairy free
Dark chocolate -I use bourneville
Fruits – This is actually optional but I choose cranberries as it was around Christmas when I first started to make this but any berries are fine or vet banana or apple. Proberley a dryer fruit but any is fine.
Here’s what you do…..
Melt the butter in a bowl (microwave or pan) and pore over the oats. I used a lot of oats to fill a big pan full but you can make as much or as little as you like.
Melt the chocolate (in a bowl over a pan of boiling water) and pour over the oats and butter, add maple syrup to taste and mix them all together.
Now you can either add the fruit and mix or what I did was pour the oat mixture in to the pan and flatten down then add the fruit to the top to decorate. I also like to add extra melted chocolate to the top of make it crunchy and extra indulgent.
Pop this all in the fridge for a few hours to set and then slice pieces as required. I reccomend a cup of tea, pyjamas and a good film to really add to the taste and that’s it. Yum!
